My mom has been asking me all week to make the “best carrot cake ever” that she discovered in Southern Living {here}. I always preferred Banana Nut Cake over carrot, so attempting this cake was a nice change-up. I’d have to say, it was a pleasant surprise! The pecans and crushed pineapple added a nice touch to the moist cake. They say that pictures are worth 1000 words, so I hope my excessive photos help you recreate this spiced classic.
