GINGER SNAPS AND PUMPKIN CHEESECAKE DIP

I couldn’t even begin to tell you how much I love ginger snaps. Every morning I manage to grab one with my coffee, and every night with my tea. It must be something I get from my mom because I always remember her buying us Pepperidge Farm Ginger Man cookies when we were younger {they’re awesome}. So because I am in such a fall-aroma-baking mood, I came up with the genius idea of making homemade ginger snaps {recipe here} and made the pumpkin cheesecake dip as well because.. I love me some pumpkin! Although I would’ve preferred them a little more crispy, they were still delicious and such a big hit with all of our guests this past weekend. I even had left over cookie dough to freeze for later!
pumpkin cheesecake dip:
ps; if you’ve never used molasses before,
be careful it smells yucky.
