GORGONZOLA PEAR SALAD

I am a huge fan of fruits in salads. Literally, any fruit mixed with cheese is like the perfect combination in my book. Growing up in a house where salads consisted of tomatoes, cucumbers, and olive oil, I always made sure to order Waldorf or strawberry salads at restaurants. As much as I’d love to go out to eat every day, my time and wallet won’t allow it. The alternative? Making it myself. I’ve made this one for a ton of family gatherings, as well as when people come over for lunch. It makes more than enough, so you will have left overs.
Start off with one head of chopped lettuce
Add 3 pears (chopped) and a few stalks of green onion (green + white part)
On the stove, add a handful of pecans (about 3/4 cups) and 1/3 cup of white sugar
(for you rookies, this candies them)
For the dressing:
1/3 cup olive oil
3 TBS red wine vinegar
1 1/2 tsp white sugar
1 1/2 tsp yellow mustard
1 clove chopped garlic
salt and pepper, to taste
Add 1 chopped avocado, candied pecans, 5 oz. gorgonzola cheese, and dressing.
Mix and fall in love.
