COOKIE CAKE 4 WAYS

A quick and simple cookie cake recipe.

My obsession with cookies are at an all time high. Therefore, creating a cookie cake that was simple and low-effort for my dinner gathering was an obvious choice for me. Nevertheless – it also had to be just as good as the ones that the Great American Cookies Company makes. (Yeah, the ones you see at your local mall). This recipe is probably second to Dania’s easy Coconut Magic Bars she posted last week. One of the best parts about this dessert is that you don’t even need measurements! I love a variety of toppings and different kinds of desserts, so I decided, why not customize my own based on my favorite treats? 

It’s absolutely crucial for me to have chocolate chips in every bite. I took a raw chocolate chip cookie dough roll by Toll House as my base spread and flattened it out in a round pan. Afterwards, I divided it by four sections so that I could determine which toppings would go on each quarter. This is where the fun begins. 

What I chose? I love a great s’mores rendition, so I went with marshmallows, graham crackers, and MORE chocolate chips for the first section. In addition, my second section consisted of a birthday-inspired style, where I added white chocolate chips and colorful sprinkles (my favorite). Furthermore, I went crazy with chocolate goodies and cut mini Snickers bars and dug them into the cookie dough, with colorful M&Ms in between. Finally, I created a section that’s an ode to samoa girl scout cookies, yet remixed. This had almonds, coconut flakes, and caramel drizzled on top. 

With four different flavors, you can accommodate any dinner party’s taste. However, I ended up eating from every section because it was THAT good. As a result, if you don’t end up in a sweet sugar coma, then you probably aren’t a cookie freak like me.

+ Directions: Preheat oven to 250 degrees. Grease a round pan with baking spray. Spread a raw cookie dough roll and press into pan. 

+ Divide cookie dough into four quarters with a knife. 

+ Sprinkle in chocolate chips into first section with crushed graham crackers and add marshmallows on top to cover entire quarter. 

+ Add white chocolate chips into second quarter and top off with colorful sprinkles.

+ Cut mini snickers bars into three pieces each and stick them into third quarter. Press M&Ms all throughout. 

+ Spread sliced almonds into fourth quarter and sprinkle sweet coconut flakes on top. Drizzle caramel syrup allover. 

+ Bake for 20 minutes and take out of the oven. Let it sit for about 10-15 minutes.
