KUMPIR: TURKISH BAKED POTATO

Kumpir is one of our favorite things we ate in Istanbul.

Picture this.  You’re in Istanbul, Turkey for the first time ever and you can’t wait to dive into some authentic Turkish food.  You have no idea what that may be (kind of Mediterranean?) but you’re ready regardless.  That was us 2 years ago (read about it here) and we got everything we expected. Hookah, Kebabs, pistachio everything… and baked potatoes.  Yeah, whatever reaction you just had, that was my reaction too.

I would’ve never guessed in a million years that Turkey would be known for their baked potatoes, so I’m telling you this now so you’re prepared.  Turkey is known for their baked potatoes.  It is called kumpir and it is amazing. Think Chipotle style service but in a baked potato. Literally, endless options of toppings (even sliced hot dogs & FRIES) can be added to your potato making this the PERFECT meal to satisfy your stomach and all of your indecisiveness. Obvi can’t fly back to Istanbul at the drop of a hat, so that’s where this recipe comes in.  YES, I remade the baked potato.  And it’s pretty damn close to what you’ll find on the streets of Istanbul.

•  baked potato

•  2 TBS butter

•  1/4 cup cheddar cheese

+ Directions: Slice halfway through the baked potato lengthwise and while still hot, mix butter and cheddar cheese inside the potato. Top with whatever you desire & enjoy! Below you will find common toppings & what we used in our spuds.

•  beets

•  Russian salad/cole slaw

•  pickles & pickled carrots

•  black & green olives

•  corn

• FOR THE SAUCE, 2 TBS yogurt, juice of half a lemon, 1/2 tsp of salt & dried mint leaves (ranch dressing or thousand island can be used as a substitute)
