AVOCADO TOAST

When in doubt, avocado toast it out. Here’s my go to recipe for avocado toast.
On Christmas Day, one of my best friends texted me and asked if I had posted my avocado toast recipe on my blog. After looking through my archives, I was surprised when I found out that I never shared it (that’s probably because I eat it so often). I woke up this Saturday, my sister came over, and I remembered to document how to make my favorite recipe (with and without egg). It’s extremely simple, but it fulfills my need every time. Avocado is such a wonderful ingredient that it really doesn’t need many accessories to show off. It’s perfect for breakfast, brunch, lunch, or just as a snack.
My ingredients: 5-grain sourdough toast from Publix bakery,
1-2 avocados, eggs, lemon, salt and pepper, and crushed red pepper
For the avocado toast with egg, I cut half of an avocado and sliced it with a knife.
Then I take a spoon and scoop it out so the slices stay intact
Now for those of you who work with avocado a lot, you know that it needs some citrus so it doesn’t brown. As you’re waiting to make the other components, make sure you toss the slices in some lemon or lime.
Put aside.
Make some eggs! I used 3 scrambled for 4 pieces of toast.
*I like my bread toasted. It’s your personal preferences on how you like it
Scoop some scrambled eggs onto the toast
Place a few slices of avocado.
(I like to add an extra squeeze of lemon) Then, sprinkle some salt, pepper, and crushed red pepper on top.
If you don’t like eggs (or don’t feel like it) take the other half of the avocado and smush it into a bowl with salt, pepper, and lemon. Then scoop it on the piece of toast and add crushed red pepper.
Pair it with a side of oranges or grapefruit.
