If you live anywhere near the South, I’m sure you’ve experienced that one Sunday where all you want for breakfast is Chick-fil-A.  For those who don’t know the significance, Chick-fil-A is closed on Sundays… and pretty much people would argue that their cravings are at an all time high when they know they can’t have any.  That happened to us a few weeks ago.  I wanted a Chick-fil-A biscuit so badly that I was willing to do anything to get one, so I decided to make my own.

I used an old buttermilk biscuit recipe that I once used to make egg and cheese biscuits, so I knew the only thing that I needed to work on was the chicken.   The secret to imitating Chick-fil-A’s to die for flavor is pickle juice and peanut oil.  If you can get your hands on both of those things, you have a solution to your Sunday Chick-fil-A cravings.

Knead the dough, but don’t overdo it.  If you do, the biscuits will be tough.

FOR THE BISCUIT (yields 12)
  1. 2 cups flour
  2. 1/4 tsp baking soda
  3. 1 TBS baking powder
  4. 1 tsp salt
  5. 6 TBS cold unsalted butter, in cubes
  6. 1 cup buttermilk, cold
FOR THE CHICKEN (yields for 4 biscuits)
  1. 2 chicken breasts
  2. 1 cup pickle juice
  3. 2 eggs
  4. 1/2 cup milk
  5. 1 cup flour
  6. 2 TBS powdered sugar
  7. 1 tsp paprika
  8. 1 tsp salt
  9. 1/2 tsp black pepper
  10. 1/2 tsp garlic powder
  11. peanut oil, for frying
Instructions
  1. Preheat oven to 450 degrees.
  2. In a food processor, combine flour, baking soda, baking powder, and salt.
  3. Add 6 TBS of cold, cubed, unsalted butter. Pulse until combined (mixture should be crumbly).
  4. Slowly add cold buttermilk and continue to combine until dough is formed.
  5. Flour a flat surface and knead dough a few times. Roll out to 1-inch thickness and use a biscuit cutter (or anything round) to cut out biscuits. Put onto a baking tray and bake for 8-10 minutes.
  6. Marinate chicken in pickle juice for as long as possible (30 mins - 1 hour preferred).
  7. In a separate bowl, combine milk and eggs. In a large ziplock bag, pour flour, powdered sugar, paprika, salt, black pepper, and garlic powder.
  8. Once chicken is done marinating, cut each breast in half.
  9. Dip each piece of chicken into the egg and milk mixture and then into the flour bag.
  10. Shake bag until the chicken in completely coated.
  11. When all four are completed, heat peanut oil in a frying pan and fry for about 2 minutes on each side or until golden brown and cooked.
  12. Transfer onto a paper towel and serve onto the biscuit.
