MIDDLE EASTERN SIMPLE SALAD

A MIDDLE EASTERN SIMPLE SALAD

An easy salad recipe that goes with everything and takes less than 10 minutes.

Yes, I said it. The PERFECT salad. What makes it perfect? I’ll tell you.

+ Takes 0 seconds. (Okay, not zero… but seriously no time at all)

+ The ideal accompaniment to ANY cuisine

+ It’s like only 100 calories (I attempted a recipe calculation)

+ It’s SO FRESH & healthy & exactly what a salad should be

Alright so what makes it Middle Eastern? Honestly, I consider it Middle Eastern because it reminds me of home… and it matches literally all Arab dishes that I can think of.  Arabs tend to claim anything that has lemon & crushed mint on it (because IT IS OURS!) so this is my favorite Middle Eastern salad recipe. I make it 90% of the time that I’m cooking anything.  The ingredients are always always always in my fridge and anytime we are craving a salad BAM this is the one you’re going to get (or a variation of it — plus or minus one ingredient). The dressing has a whopping THREE things in it… & DON’T YOU DARE pass on that crushed mint because you need it in your life and it makes ALL the difference. I don’t even need to tell you how much healthier this dressing is over any dressing you’ll ever have.

A MIDDLE EASTERN SIMPLE SALAD A MIDDLE EASTERN SIMPLE SALAD

1 large cucumber

1 tomato

1/4 white onion

1/4 head of lettuce

+ For the dressing:

juice of (about) 2 lemons (I use like a million for the +++benefits)

1 tablespoon olive oil

1 teaspoon crushed mint

salt & pepper to taste

+ Directions: Roughly chop all ingredients and place them in a bowl. Whisk all ingredients for dressing separately. Toss all together & enjoy. So hard, right?!

** If you get bored of eating this everyday of the week then you can toss in some balsamic vinegar to change it up or add some crushed garlic to your dressing. So, SO delish.
